It is officially 8 days until Christmas here in Okinawa, Japan. Last week my sister and I baked almost 1,000 cookies for the service members here on the island! Below are the 6 recipes we used!
Lemon Snowflake Cookies
Let’s start with the simplest cookie we did. This cookie was a refreshing change from the heavy butter cookies, heavy frosting and chocolate that is everywhere this time of year. With only 4 ingredients, it was super simple and very quick to make! This recipe doesn’t need any special equipment either! We found this recipe on Taste of Home! We may make a red version for Valentines…Strawberry?!?
Funfetti Snowball Cookies
Tiffany sent the link to these cookies! They are very simple to make as well! Sweetened condensed milk is blended with butter, vanilla, flour, baking powder and of course, sprinkles!! A cookie scoop and a stand mixer makes these cookies a breeze!! They are very tender and super fun! This recipe comes from Lord Byron’s Kitchen!
Red Velvet White Chocolate Chip Cookies
These are so festive! Deep red cookies with beautiful snowy white chocolate chips! These buttery, cakey, chewy cookies with a hint of cocoa are so delicious! We found this recipe at Sally’s Baking Recipes and substituted the chocolate chips for white chocolate chips!
Chocolate Chip
For this classic cookie, we chose to go with Ghirardelli’s recipe! Equal parts brown and white sugar give this cookie a little bit of a rise, with a nice chewy bite. The little dots of chocolate are like hidden gems in the amazing little cakes.
Peanut Butter Cookies
Another recipe from Sally’s Baking Recipes, this peanut butter cookie recipe is UH-Mazing! The dough is incredibly soft so it is important to put them in the refrigerator for at least an hour. Make sure you plan for that extra time. These cookies are nice and soft and the taste is incredible!!

Mexican Wedding Cookies
I saved my very favorite for last! Mexican Wedding Cookies! These crumbly, buttery, tender cookies are a perfect blend of buttery shortbread, toasty nuts, and the sweetness of powdered sugar. I make these cookies every year! We found this recipe at Barefeet in the Kitchen
I hope your kiddos loved these cookie boxes! It was wonderful watching their faces light up as they received their boxes.
